The vegetarian flavor.
On ORG Bistrô’s kitchen, the only ingredients that come in are 100% organic, local, seasonal, fresh and unprocessed. The vegetarian cuisine restaurant, located on Barra da Tijuca, opened in 2011 and is commanded by chef Tati Lund. Tati is a vegetarian graduated in Nutrition who also studied at Natural Gourmet Institute for Health & Culinary Arts in New York. The dishes, which vary according to the vegetables that are available, bring a mixture of color with special touches; there are two options every day, handwritten on the menu by Tati herself. The decoration is also handled by the chef, with paintings and drawings of motivational sentences hung on the walls.
Among the most famous recipes are the Vegetarian “Feijoada” (black beans stew with vegetables) – served with beet “farofa” (toasted and seasoned
shredded beet), wholegrain rice and collard greens; the Burritos – one made of beet with corn and tomato, and another made of spicy mushrooms – served with tofu and guacamole sour cream, beans salad with lemon and also the house’s green salad as a starter, and Thai Rice – black rice, quinoa, mushrooms, apple, chestnut cream with lemon grass and ginger, as well as toasted seeds and green salad.
